Mint & Chocolate Meringue Cookies

These meringue cookies are easy to make. They are crispy and light with mint and chocolate chips! They even get better with time and last quite a while if stored in an airtight container – if you can resist eating them!

 

~ Mint Chocolate Chip Meringue Cookies ~

  • 3 large egg whites
  • 1/8 tsp cream of tartar
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup dark chocolate and mint chips

 

Method

Method

  1. Heat oven to 300°F.
  2. Cover cookie sheet with nonstick silicone pad or parchment paper.
  3. Using a mixer, beat the egg whites and cream of tartar together in large bowl at high speed until soft peaks form.
  4. Gradually add sugar a little at a time, then vanilla, beating well after each addition until you get stiff peaks, the sugar is dissolved and the mixture is glossy.
  5. Fold in mint chocolate chips.
  6. Drop mixture by tablespoons onto cookie sheet.
  7. Bake 35 to 45 minutes or just until dry.
  8. Cool slightly; remove from cookie sheet.
  9. Cool completely on wire rack.
  10. Store covered, at room temperature. Makes about 30 cookies.

Tips
If you can’t get mint chocolate chips you could just use the dark chocolate one and add a few drops of peppermint extract
For perfect meringues make sure the eggs are room temperature, and that you use metal beaters and bowls.
