Baked Stuffed Peaches With Amaretti

This is a delicious dessert using sweet, juicy peaches baked in wine and topped with amaretti crumbs. It is quick and easy to make and at only 160 calories per serving you can enjoy this treat without feeling guilty!

 

Baked Stuffed Peachespeach

Ingredients

  • 4 ripe peaches, halved and stoned
  • 25 grams butter
  • 25 grams light muscovado sugar
  • 150 ml (¼ pint) dessert wine or orange juice
  • 25 grams amaretti biscuits, crushed

Method

  1. Preheat the oven to 220°C (200°C fan) mark 7.
  2. Put the peach halves into an ovenproof dish, cut side up, and dot the fruit with the butter.
  3. Sprinkle over the light muscovado sugar and pour over the dessert wine or orange juice.
  4. Scatter over the crushed amaretti biscuits and cook in the oven for 8 – 10 min until the peaches are soft and the butter and sugar have melted.
