Chocolate Mocha Mousse

This chocolate mocha mousse is light, fluffy, rich and decadent without the use of full fat double cream. If you’re looking for a satisfying chocolate fix there is no compromise on flavour in this recipe.

Ingredients

  • 75g dark chocolate
  • 3 eggs, separated
  • 1 tsp instant coffee granules (dissolved in a little hot water)
  • 1 tsp vanilla bean extract
  • 2 tbsp sweetener
  • 50g fat free Greek yoghurt

Method

  1. Melt chocolate over a pan of simmering water, then set aside to cool slightly.
  2. Whisk egg whites till soft peaks form.
  3. Add coffee and vanilla extract to the yolks and place over a pan of simmering water, whisk until light and fluffy.
  4. Add the yoghurt and egg yolk mix to the melted chocolate and whisk for a minute.
  5. Fold in the egg whites a little at a time.
  6. Pour into 4 ramekins and place in the fridge overnight.
  7. Decorate with berries and serve.
