Chocolate Mocha Mousse
This chocolate mocha mousse is light, fluffy, rich and decadent without the use of full fat double cream. If you’re looking for a satisfying chocolate fix there is no compromise on flavour in this recipe.
Ingredients
- 75g dark chocolate
- 3 eggs, separated
- 1 tsp instant coffee granules (dissolved in a little hot water)
- 1 tsp vanilla bean extract
- 2 tbsp sweetener
- 50g fat free Greek yoghurt
Method
- Melt chocolate over a pan of simmering water, then set aside to cool slightly.
- Whisk egg whites till soft peaks form.
- Add coffee and vanilla extract to the yolks and place over a pan of simmering water, whisk until light and fluffy.
- Add the yoghurt and egg yolk mix to the melted chocolate and whisk for a minute.
- Fold in the egg whites a little at a time.
- Pour into 4 ramekins and place in the fridge overnight.
- Decorate with berries and serve.
